Here in the Southern Hemisphere we are gearing up for winter, while the Northern Hemisphere are dreaming of warmer weather. We still have some great autumn days and an abundance of lemons. I whipped up a batch of this lemonade concentrate to keep in the fridge for the last days of autumn. It’s a great way to get vitamin C into my kids!
3 cups of lemon juice (I squeezed 12 lemons and added some pulp too)
2 cups of water
3 cups of white sugar
1. Place sugar and water into a medium pot.
2. Stir over a medium heat until the sugar dissolves, this will take a while, but when the liquard is clear, you are ready to go.
3.Remove from the heat and add the lemon juice to the pot.
4. Store in a glass bottle and dilute with sparkling or still water.
5. Serve with plenty of ice and mint.
