Coconut Easter Nests – Bake with Grace

Easter baking is always so much fun for my kids, they love getting their hands sticky. I think they eat most of the speckled eggs before we get a chance to decorate with them, but that’s just part of the fun. Give these easy treats a try and let me know how they turn out.

200g desiccated coconut

1 egg white

30ml condensed milk

speckled eggs to decorate

100g white chocolate melted

In a medium bowl, combine the coconut, egg white and condensed milk.

Mix well.

Press small amounts of the mixture into mini muffin tins, making a dent in the centre to create a nest shape.

Bake for 8 to 10 minutes, until the edges are lightly toasted.

Allow to cool in the tin.

Remove the nests from tin and place half a teaspoon of melted chocolate in each nest. Top with speckled eggs.

  • 200g desiccated coconut
  • 1 egg white
  • 30ml condensed milk

  • 100g white chocolate melted
  1. In a medium bowl, combine the coconut, egg white and condensed milk.
  2. Mix well.
  3. Press small amounts of the mixture into mini muffin tins, making a dent in the centre to create a nest shape.
  4. Bake for 8 to 10 minutes, until the edges are lightly toasted.
  5. Allow to cool in the tin.
  6. Remove the nests from tin and place half a teaspoon of melted chocolate in each nest. Top with speckled eggs.
