Grapefruit Yoghurt Cake – Bake with Grace

This cake is so retro, that if you look up retro in Wikipedia, there is a picture of this cake there.

I was given this recipe by a friend of mine, an older friend of mine. She said back in the day, before I was born, this was a great cake to give at a pantry party to a bride to be.

Before, I have to explain what a pantry party is….. let’s get to the recipe.

Use a small tub of yoghurt ( I used a 150g one) and use the empty tub to measure the rest of the ingredients. Clever, isn’t it. So simple, even a new bride could not mess it up!  (tongue in cheek : where is that emoji )

Cake:

1 pot of natural yoghurt (full fat is best)

2 pots of flour

7,5ml baking powder

1 pot castor sugar

½ pot of vegetable oil

3 eggs

zest of one grapefruit

juice of half a grapefruit

3ml salt

Drizzle:

30ml grapefruit juice

zest of 1 grapefruit

250ml icing sugar

Cake:

Preheat oven to 180ºC

Grease a loaf tin

Scoop yoghurt out into a large bowl, add eggs, oil and sugar.

Sift flour, baking powder and salt into bowl and mix well.

Stir in grapefruit juice and zest.

Spoon into a prepared loaf tin and smooth the top with the back of a spoon.

Bake for 30 to 35 minutes until a tester comes out clean.

Turn out onto a cooking rack and cool completely before topping with drizzle and serving.

Drizzle:

Combine icing sugar and grapefruit juice and zest.Mix well.

Drizzle over cooled cake, before slicing.
