A Sundae for a Sunday!
I made these on Expresso Morning Show the other day for National Sundae Day. I love ice cream in winter, but I think I’m the only one, so I combined a classic winter dessert with a classic summer dessert and it’s delicious.
Drizzle over some Caramel Sauce and winter won’t seem so bad.
Crumble:
- 60g butter
- 30g walnuts
- 80ml flour
- 40ml brown sugar
- 5ml cinnamon
Apples:
- 2 apples, peeled and sliced into chunks
- 30ml brown sugar
- 5ml cinnamon
- 15ml flour
- 30ml apple juice
- zest of an orange
For the crumble:
Preheat oven to 180ºC
Combine all ingredients in a medium bowl and rub the butter in, until it is well combined.
Place on a baking sheet and bake for 30 minutes until golden. Allow to cool.
For the Apples:
Combine all the ingredients in a medium saucepan.
Bring to the boils and then simmer for about 8 minutes. Don’t let the apple get mushy.
Allow to cool.
Assemble:
Scoop ice cream into a dish.
Top with apples, crumble and finally the caramel sauce.
Eat immediately.
Not sure about Graeme’s funky hair here!
