Banana & Walnut Bread – Bake with Grace

When the bananas in the fruit bowl go a bit brown, I know that it’s time to make some banana bread. Walnuts are in season at the moment and they make a great addition to banana bread, making it a great way to get some fruit and nuts into your kids.

If you don’t have time to make anything with the bananas, just peel them and put them in a ziplock bag and put them into the freezer. You can use them when it suits you, just thaw them for about 15 minutes before you use them.

What I love about this recipe, is that it’s mixed in one bowl, so it’s really quick to mix up for a tea time treat.  It keeps well too, so send any left overs to school or the office for a great lunchbox addition.

Banana and Walnut Bread

250ml brown sugar

4 bananas

60g roughly chopped walnuts

1 egg

125ml oil

5ml vanilla extract

500ml flour

5ml cinnamon

5ml baking powder

5ml bicarbonate of soda

3ml salt

Crunchy Topping

125ml flour

125ml brown sugar

40g walnuts

60g butter

Crunchy Topping

Place walnuts into a food processor and blitz until finely ground.

Add flour, sugar and butter and process until well combined.

Set aside.

Preheat the oven to 180ºC. Grease a loaf tin.

In a large bowl, mash the bananas with the sugar. Add the oil, vanilla and egg and mix well.

Sift the flour, salt, cinnamon and baking powder into the banana mixture and add the walnuts. Mix until all ingredients are incorporated.

Spoon batter into loaf tin and top with prepared topping.

Bake for 50 to 60 minutes until a tester comes out clean.

Allow to cool for 5 minutes in the tin, then turn out onto a wire rack and cool before cutting and serving.

  • 125ml oil
  • 5ml vanilla extract
  • 500ml flour
  • 5ml cinnamon
  • 5ml baking powder
  • 5ml bicarb
  • 3ml salt

  • 125ml flour
  • 125ml brown sugar
  • 40g walnuts
  • 60g butter
