Sweetcorn Fritters – Bake with Grace

Today I am sad, I need comfort food. Food that will fill my tummy, and fill my heart too.

These sweetcorn fritters have a handful of cheese added to them to make them extra comforting. I often make them to go with a big pot of chicken soup. The kids love to make these too, there is really no way that you can mess them up, so I let them get on with it.

Today I’ve served these with bacon and avo to make a tummy filling lunch, but choose what your family loves most to serve along side this comfort food.

This batter will keep in the fridge overnight, so you can make it ahead of time and fry them off when you need them.

1 can cream style sweetcorn

1 egg

5ml baking powder

250ml flour

chopped parsley

3ml salt

250ml cheese

oil for frying

Sift flour, baking powder and salt into a medium bowl.

Add the remaining ingredients and mix well.

Heat a little oil in a frying pan and drop tablespoons of batter into the frying pan.

Fry on each side until golden.

Serve warm
