I must admit that french toast is a staple food in my house, both for breakfast on the weekends and for a snack after school. All of my kids, except the toddler can make this delicious snack.
Today I thought it needed an upgrade. I am in love with the range of ButtaNutt nut butters and my favourite is macadamia and cinnamon. Of course if you can’t get your hands on some, then just put 100g of macadamia nuts and a teaspoon of cinnamon in your food processor and grind away until a smooth paste is formed. You will thank me for introducing you to this wonderful treat.
The baking powder will puff up the egg when you fry the bread and give you an extra fluffy, yet crispy french toast. (a trick my best friend past onto me)
The following recipe makes enough for two servings, so adjust according to your family size.
1 egg
30ml milk
pinch of salt
3ml baking powder
four slices of bread (crusts removed)
10ml macadamia and cinnamon nut butter
oil for frying
syrup, blueberries and cinnamon to serve
Spread nut butter onto two slices of bread. Top each with second slice of bread and divide each sandwich into three.
In a shallow dish, beat egg and milk together. Add salt and baking powder and beat well.
Preheat a frying pan and add oil to fry.
Dip each piece of bread into the egg mixture, covering the entire piece of bread.
Fry on each side until golden, you may need to turn each slice on it’s edge too.
Serve warm, drizzled with syrup and topped with blueberries. Sprinkle some extra cinnamon too if you wish.
