Ice cream tops my all time favourite dessert list, along with meringues, that is. I make ice cream all summer long in as many flavours that my family will indulge me. I’ve already posted my Chocolate Bar Ice-cream , so this time, I’m going with a really summer flavour: Strawberries.
Make this dessert a couple of days ahead of time, to let it freeze properly in the freezer. I always keep a little back in the tray after I serve it to my guests for a sneaky midnight snack! It is truly moreish.
To help freeze the ice cream quickly, I put the mixture in a glass bowl over another bowl filled with ice water. This lowers the temperature quickly before I pop it into the freezer.

500g fresh strawberries
250ml castor sugar
3ml vanilla extract
250ml milk
500ml cream
Prepare a glass bowl over a bowl of ice filled water. Set aside.
Core and wash the strawberries, chop larger ones into smaller pieces.
Place all the strawberries into a food processor and blitz them until they are smooth.
Heat the milk and add the sugar and vanilla, stir until sugar is completely dissolved.
Add the cream to the milk and pour the mixture into the food processor while the machine is on the lowest setting.
Pour the ice cream into the prepared bowl and allow it to sit until it is below room temperature.
Either place ice cream into an ice cream machine to churn or pour the ice cream into a shallow dish and freeze overnight.
Serve with more sliced strawberries or Gluten -free Double Chocolate Brownies
