Gluten-free Pear & Apple Crumble – Bake with Grace

I’ve been a bit gluten-free obsessed lately. I’ve come late to the trend, but I’m sure I’m having the most fun.

Apple crumble is such a great winter dessert, it seems so unfair to let people who exclude gluten from their diets miss out. So here’s what I’ve come up with. I must confess, that I think that it’s better than the Pear & Apple Crumble  I posted a while back. The crumble does fall apart  more than the original, so be careful when dishing up. Individual dishes may solve this problem.

I can’t trust my family’s opinion, as they will literally eat anything I make. So try it out and let me know in the comments below.

Filling:

4 medium apples

2 large pears

50g fruit cake mix

100g mascavado brown sugar

5ml cinnamon

4 cloves

60ml apple juice

30ml corn flour

Crumble:

125ml almond flour

125ml coconut flour

125ml mascovado sugar

5ml baking powder

3ml salt

50g finely chopped walnuts

50g roughly chopped walnuts

80ml desiccated coconut

125g butter (at room temperature)

Filling:

Peel and core the apples and pears. Cut into large chunks and place in a medium saucepan with the remaining filling ingredients.

Bring to the boil and simmer for about 8 minutes. Do not allow the fruit to begin getting mushy.

Spoon the fruit into a dish. Remove the cloves.

Crumble:

Combine all ingredients and rub in the butter until it is completely combined.

Crumble the topping over the prepared apples, take care to cover it completely.

Place the dish on a baking sheet to catch any juice from the apples that will bubble up.

Bake for 30 minutes.

Serve warm with coconut cream or custard.
