I don’t have any bread in the house today for lunch. I know, I know. Bad planning and a sign of how close to complete domestic chaos I probably am. But I had a plan. I made pizza.
Genius. I got the kids involved and they were too busy grating cheese and spreading tomato mix that they didn’t notice their tummies grumbling until they could smell the cheese bubbling and it was time to sink their teeth into the deliciousness that is homemade pizza. Disaster averted and hero status claimed!
From making the dough and eating the pizza, it’s about 30 minutes. Seems unbelievable, but it’s true. I don’t let my dough prove at all, just make it and roll it out and bake it after I’ve topped it with whatever toppings I have in the fridge. I crank up my oven to the highest it can go and while it’s coming up to temperature I make the dough and get the kids to get the toppings ready.

Dough:
750ml flour
300ml water
15g fresh yeast (10 ml instant yeast)
5ml salt
30ml oil (olive if you have)
Toppings:
Tin of tomato and onion mix
mozzarella cheese or cheese of your choice, grated
favourite toppings
Preheat oven to 260ºC
Combine the yeast, oil and water and mix well.
In a large bowl, combine flour and salt.
Pour in the yeast mixture and mix well.
Turn dough out onto a floured surface and knead until a smooth dough is formed. About two minutes
Divide dough into six balls.
Roll each ball out with a rolling pin as thin as you like your crust.
Place dough onto a prepared baking sheet
Spread tomato mix onto the base and top with mozzarella cheese.
Add toppings of your choice.
Bake for 8 to 10 minutes until golden.
Serve hot.
